Add ½ teaspoon ground fennel seeds to mayonnaise mixture in step 2. Substitute 1 teaspoon minced fresh thyme for parsley and add 1 peeled Granny Smith apple, cut into ¼-inch pieces, and ½ cup coarsely chopped toasted walnuts to salad with celery.
Chicken Salad with Red Grapes and Smoked Almonds
Add ¼ teaspoon grated lemon zest to mayonnaise mixture in step 2. Substitute 1 teaspoon minced fresh rosemary for tarragon, and add 1 cup quartered red grapes and ½ cup coarsely chopped smoked almonds to salad with celery.
