IMPROVISING A FLAME TAMER

A flame tamer fits over the burner to reduce the heat to a bare simmer. To make one, take a long sheet of heavy-duty aluminum foil and shape it into a 1-inch-thick ring. Make sure the ring is of an even thickness so that the pot will rest flat on it.
