Spicy Chili Rub


MAKES ABOUT 1 CUP

If you cannot abide spicy food, reduce or eliminate the cayenne.

tablespoons paprika

tablespoons chili powder

tablespoons ground cumin

tablespoons dark brown sugar

tablespoons table salt

tablespoon ground oregano

tablespoon granulated sugar

tablespoon ground black pepper

tablespoon ground white pepper

teaspoons cayenne pepper (see note)

Combine all the ingredients in a small bowl. (The rub can be stored in an airtight container at room temperature for up to a month.)
