Omit soy sauce, sherry, ginger, and sesame oil. Whisk 4 teaspoons fish sauce, 1 tablespoon lime juice, 2 teaspoons minced fresh lemon grass, and ⅛ teaspoon red pepper flakes into water, along with sugar. Substitute ½ red onion sliced through root end into ¼-inch-thick pieces for shiitakes and 2 tablespoons chopped fresh mint for scallion greens.
