See the photos to prepare these cookies. Turbinado sugar is commonly sold as Sugar in the Raw. Demerara sugar, sanding sugar, or another coarse sugar can be substituted.

cups (12 ounces) raspberry jam, strained, simmered until reduced to 1 cup, and cooled to room temperature |
1. Line 2 large baking sheets with parchment paper. Using a 2-inch round fluted cookie cutter, cut rounds from 1 piece of rolled dough and bake on a prepared sheet in a 375-degree oven, rotating the baking sheet halfway through the baking time, until the cookies are light golden brown, 8 to 10 minutes.
2. Sprinkle the second piece of rolled dough evenly with the sugar.
3. Using a 2-inch round fluted cookie cutter, cut rounds of sugar-sprinkled dough. Using a ¾-inch round fluted cookie cutter, cut out the centers of the sugared rounds. Place the cookies on a prepared sheet and bake, rotating the baking sheet halfway through the baking time, until the cookies are light golden brown, about 8 minutes.
4. When the cookies have cooled, spread 1 teaspoon jam on the top of each solid cookie, then cover with a cut-out cookie. Let the filled cookies stand until set, about 30 minutes.
