LEMON-INFUSED VODKA

I COULD TASTE THE LEMON IN THE VODKA after a week but chose to leave it for three weeks before using. When I opened the jar lid, I was overwhelmed with the most gorgeous aroma of lemon filling the air. Completely intoxicating. The vodka takes on the most perfect shade of light yellow as well.

MAKES ABOUT

1 QUART / 950 MILLILITERS LEMON VODKA

1 quart / 950 milliliters vodka (choose a brand with a neutral flavor)

6 medium-size lemons, washed and cut into eighths

Combine the vodka and lemon pieces in a large jar and seal it tightly.

Store the jar in the refrigerator for 2 weeks, shaking occasionally to marry the flavors.

After 2 weeks, strain the mixture through a colander and discard the solids.

Strain it again through a colander lined with cheesecloth to remove any fine sediment, and decant it into a clean glass jar. Store in a cool, dark place and use within 6 months, for peak flavor.

NOEL’S WAY

• Freeze until it’s thick, and serve as shots at a summer garden party.

• Fill a tall glass with cranberry juice and ice, and float the lemon vodka on top.

• Mix with fresh blueberries, ice, and cream, and blend for a frozen cocktail.

• To turn this into the classic Italian digestif limoncello, dissolve 2 cups / 400 grams of sugar in 2½ cups / 595 milliliters of boiling water, let cool, then add to the infused vodka. Let it rest for 2 weeks in the refrigerator, then serve over ice.
