Two Fruit Compotes

EACH MAKES 500G / 17½OZ

APPLE & PEAR

500g / 17½oz mixture of apples and pears, peeled, cored and roughly chopped

½ vanilla pod (bean)

40g / 2 tbsp agave syrup

200ml / ¾ cup water

small pinch of sea salt

FIG & GINGER

300g / 10½oz fresh figs, trimmed and quartered

20g / ¾oz fresh root ginger, peeled and grated

30g / 1½ tbsp honey

100ml / 7 tbsp water

small pinch of sea salt

Add all the ingredients to a medium saucepan, bring to the boil, then reduce the heat to low (covering with a lid for the apple and pear recipe), so that the fruit gently bubbles away as it breaks down. Stir occasionally to avoid the compote catching.

Let the compote simmer gently (Apple & Pear for 35–40 minutes; Fig & Ginger for 25 minutes), then remove from the heat and let cool completely. Store in the fridge for up to 5 days.
