Energy Bites

MAKES 8 BITES

80g / ¾ cup porridge oats

80g / scant ⅓ cup peanut butter or almond butter

50g / 4 tbsp coconut oil, melted

30g / ¼ cup raisins

20g / 1 tbsp honey

40g / ½ cup desiccated (dried shredded) coconut

Add all the ingredients (reserving half the desiccated / shredded coconut) to a saucepan and, on a low heat, stir well to combine, just until the coconut oil and peanut butter have loosened completely. Remove from the heat and let cool for 5 minutes.

Sprinkle half the remaining coconut into the base of a medium Tupperware box, then pile on the warm mixture, flatten out and compress it with the back of a spoon. Sprinkle the rest of the coconut evenly on top, let cool completely, then seal with the lid and transfer to the fridge to set overnight.

Once the slab has set, either remove the entire block and slice up, or just cut out chunks as and when you like.

Store in the fridge for up to 5 days. You can also freeze it for up to 1 month.
