Brie & Grape Toasties

SERVES 4

6 tbsp mayonnaise

8 slices of bread (your choice)

160g / 5¾oz seedless red grapes, halved

3 tbsp Dijon mustard

4 spring onions (scallions), finely sliced

140g / 5oz Brie, thinly sliced butter and olive oil, for frying

Spread the mayonnaise on one side of each slice of bread (like you would with butter).

Add the grapes, mustard and spring onions (scallions) to a bowl and mix very well to coat and combine.

Turn the mayo sides of 4 of the bread slices onto their backs (so the bare side is facing up). Layer on the Brie, then top with the grape, onion and mustard mixture. Place the second slice of bread on top, with the mayo side on the outside, to give you 4 sandwiches.

Heat a knob of butter and a small drizzle of olive oil in a large, non-stick frying pan on a low heat and add one (or two, depending on the size of your pan) toastie(s) to the pan. Fry on one side for 3–5 minutes, or until the base is golden brown and the Brie is starting to melt. Carefully turn and fry on the other side until you have a second golden-brown side and the Brie is gloriously gooey.

Transfer to a plate and cook the remaining toasties.
