Pineapple & Rum Cocktail
SERVES 4
400g / 14oz fresh pineapple flesh, roughly chopped
juice of ½ lemon
4 shots of dark rum
handful of ice cubes
prosecco
Add the pineapple, lemon juice and rum to a NutriBullet or high-powered blender and blitz. Strain through a sieve into glasses filled with ice.
Top up with prosecco and serve immediately.
