Miso & Sesame Peaches

SERVES 4

4 peaches

2 tbsp white miso

juice of 1 lemon

1 tsp coconut sugar, sifted

drizzle of sesame oil

1 tbsp toasted sesame seeds and some fresh mint, to serve (optional)

Preheat the oven to 200°C / 400°F / gas mark 6.

Halve the peaches and remove the stones, then place on a baking tray (pan).

Mix the miso and lemon juice in a small bowl, then spread this over the peach halves. Sprinkle over the coconut sugar, then bake on the top shelf of the oven for 30 minutes until tender and caramelized.

Drizzle over some sesame oil and return to the oven for a final 10 minutes.

Sprinkle over the sesame seeds and tear some fresh mint on top, to serve, if you like.

/ These are quite ‘savoury’, so either serve with yoghurt or the Mango Frozen Yoghurt, or serve as part of a summer feast (they are great cooked on a BBQ or grill too) instead of chutney.
