Melon, Lime & Honey Granita
SERVES 4–6
150ml / 10 tbsp water
2 tbsp honey
zest and juice of 2 limes
1 cantaloupe melon, skin and seeds discarded (400g / 14oz flesh)
Add all the ingredients to a food processor and blitz until smooth.
Transfer the mixture to a freezer container and place, uncovered, in the freezer for 3 hours, breaking up the granita every 30 minutes, by scraping the mixture with a fork.
Store in the freezer, covered, for up to 1 month, and just give it a fresh scrape when you’re ready to serve.
