Serves 8
1/2 gal. whole milk
2 T. whipping cream
2 T. butter, melted
3/4 t. paprika
1-1/2 lbs. cooked lobster meat
1/8 t. salt
Garnish: oyster crackers
Heat milk and cream in a double boiler; do not allow to boil. In a skillet over low heat, combine butter and paprika. Add lobster and heat slowly, gently warming the meat (do not overheat). Add lobster mixture to milk mixture and simmer on low for about 40 minutes; add salt. Serve with oyster crackers.
Mmm...freshly baked rolls are so cozy served with New England Lobster Stew! Tie refrigerated bread stick dough into loose knots and arrange on a baking sheet. Brush with beaten egg and bake as package directs.
