Three-Cheese Egg and Kielbasa Casserole

This breakfast recipe that is loaded with cheesy goodness to bring comfort on cold winter mornings.

Makes 4 to 6 servings.

14 slices whole grain sandwich bread

1/2 pound kielbasa, browned and drained twice to remove as much fat as possible

1 cup grated Monterey Jack cheese

1 cup grated cheddar cheese

1/2 cup grated mozzarella

12 eggs

21/4 cups milk

1 teaspoon salt

1/2 teaspoon pepper

1/4 cup chopped fresh parsley

1. Spray the inside of the slow cooker with non-stick cooking spray.

2. Break up or cut bread into large squares. Layer bread, sausage, and cheeses until ingredients are used up.

3. Beat eggs, milk, salt, and pepper together. Pour egg mixture over the other ingredients. Cover and cook on Low for 8 to 12 hours or on High for 5 to 6 hours.

Variation:

Add zing to your morning by spicing up this dish. Add 1 teaspoon cayenne pepper, or substitute Pepper Jack for the Monterey Jack cheese. Add a few drops of hot sauce to the eggs before pouring over the other ingredients. You might even consider adding some sliced jalapeno peppers before cooking.
