Makes 4 to 6 servings.
1 bone-in leg of lamb (shank removed)
1 tablespoon olive oil
1/2 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
1 teaspoon fresh rosemary, chopped
1 teaspoon fresh mint, chopped
3 cloves garlic, minced
1. Put the olive oil in your hands and rub the oil all over the lamb.
2. Put the lamb in the slow cooker and sprinkle it all over with the salt, pepper, rosemary, mint, and garlic, rubbing the spices onto the meat.
3. Cover and cook on Low for 6 to 8 hours (do not cook on High).
4. Season with additional salt and pepper if desired.
