Forbidden rice is black-grained rice that was once considered so rare and special that only the Chinese emperors could eat it. It is a thick-grained rice that cooks like Arborio rice. It has a wonderful whole-grain flavor. The color and texture will add an exotic touch to your holiday table.
Makes 6 to 8 servings.
2 cups Forbidden rice
31/2 cups water
1/2 teaspoon salt
2 tablespoons unsalted butter
1. Rub the butter on the inside of the slow cooker to grease it lightly.
2. Add the rice, water, and salt.
3. Cover and cook on Low for about 4 hours and on High for about 2 hours. Be careful not to overcook.
Variation:
Add some color to the rice with the addition of sautéed vegetables. Consider diced fresh red and/or green peppers, or red peppers and broccoli florets, or even corn.
