Sweet Potatoes and Apples

This is a New England version of candied sweet potatoes, with applesauce and maple syrup providing moisture while cinnamon adds a bit of aroma and spice. Serve it with any simple poultry or pork dish, and even with game meats such as venison.

Makes 4 to 6 servings.

1 tablespoon butter (for greasing the slow cooker)

3 large sweet potatoes or yams, peeled and thinly sliced

2 Granny Smith apples, peeled, cored, and thinly sliced

1 cup chunky applesauce

2 tablespoons maple syrup

2 tablespoons brown sugar

6 tablespoons unsalted butter, melted

1/4 teaspoon ground cinnamon

Pinch of salt

1. Grease the inside of the slow cooker with butter.

2. Arrange half the sweet potatoes and apples in the slow cooker. Combine applesauce, maple syrup, brown sugar, melted butter, cinnamon, and salt in a mixing bowl. Pour half the mixture over the sweet potatoes and apples, and repeat with remaining potatoes, apples, and mixture.

3. Cook on Low for 6 to 8 hours or on High for 3 to 4 hours, or until sweet potatoes are tender.
