We snuck this one in because we know you want to keep your commitment to vegetables but you are time challenged! One of the joys of a slow cooker is that you can put something like this together quickly and trust it will come out tasting great.
Makes 4 to 6 servings.
Two 16-oz bags of frozen vegetables (mix and match broccoli, cauliflower, brussel sprouts, pearl onions, or a mix with water chestnuts)
2 tablespoons olive oil
1 small onion, diced
2 cloves garlic, minced
1 cup water or vegetable stock or broth
Salt and pepper to taste
1. Put frozen vegetables into the slow cooker.
2. In a small skillet over medium-high heat, add the olive oil, onions, and garlic and cook, stirring, until onions are translucent, about 3 minutes. Scrape mixture into slow cooker.
3. Add water or vegetable broth. Cover and cook on Low for 4 to 5 hours or on High for 2 to 3 hours until vegetables are tender. Season with salt and pepper to taste.
