Turkey Reuben Sandwiches

A Reuben is traditionally a high-calorie meal, but this version drastically lowers the high-fat content typically found in Reubens.

Serves 2

  1. Heat oil in a nonstick skillet over medium heat.
  2. While pan heats, evenly divide turkey, cheese, sauerkraut, and dressing between the slices of rye bread, stacking two with toppings, then topping with the remaining two slices.
  3. Cook sandwich in skillet 3–4 minutes per side, until bread is toasted and warm, then serve.
