Linguine and Caper Sauce
This traditional Mediterranean-style pasta is simple to prepare and can be made in bulk in order to have reheated meals throughout the week.
Serves 6
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- ¼ teaspoon red pepper flakes
- 1 (26-ounce) jar marinara sauce
- 1 (3.5-ounce) jar capers, chopped
- ½ cup chopped fresh parsley
- ½ teaspoon lemon zest
- 1 (16-ounce) package linguine
- Combine oil, garlic, and red pepper flakes in a large saucepan over medium heat and cook 2 minutes until garlic becomes fragrant.
- Stir in marinara, capers, parsley, and lemon zest, then reduce heat to low and simmer 15 minutes.
- While sauce is simmering, prepare linguine according to the package directions.
- Combine pasta and sauce, tossing until mixed well, and serve.
