Avocado Southwestern Salad

This filling, Southwestern-style salad is packed with healthy fats from the avocado and beans and makes the perfect side dish or stand-alone meal.

Serves 4

  1. For dressing: Whisk together oil, lime juice, cumin, salt, and pepper until emulsified.
  2. For salad: Toss lettuce, avocados, beans, corn, onion, and cilantro in a large bowl.
