Avocado Southwestern Salad
This filling, Southwestern-style salad is packed with healthy fats from the avocado and beans and makes the perfect side dish or stand-alone meal.
Serves 4
- ¼ cup olive oil
- ¼ cup lime juice
- ½ teaspoon ground cumin
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 2 bags (about 12 cups) romaine lettuce
- 2 medium avocados, peeled, pitted, and cubed
- 1 (15.5-ounce) can pinto beans, drained and rinsed
- 1 cup cooked corn kernels
- ½ medium red onion, peeled and diced
- ½ cup chopped fresh cilantro
- For dressing: Whisk together oil, lime juice, cumin, salt, and pepper until emulsified.
- For salad: Toss lettuce, avocados, beans, corn, onion, and cilantro in a large bowl.
- Mix dressing with salad and serve.
