Zucchini and Potato Bake
Potatoes are full of important nutrients and are a very filling source of carbohydrates. Combined with zucchini, this nutritious and tasty recipe will keep you full for hours.
Serves 4
- 2 medium zucchini, sliced
- 4 medium potatoes, peeled and cut into large chunks
- 1 medium red bell pepper, seeded and chopped
- 1 clove garlic, minced
- ½ cup bread crumbs
- ¼ cup olive oil
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- Preheat oven to 400°F.
- In a medium baking pan, toss all ingredients together, spreading evenly over the pan.
- Bake 1 hour or until potatoes are tender, stirring occasionally.
