Southwestern Fajitas
Fajitas are a very flexible meal. Once cooked and prepared, they can be reheated and eaten alone or served with tortillas and rice for extra carbs. You can also serve these with shredded Mexican cheese and low-fat sour cream.
Serves 2
- 6 ounces boneless, skinless chicken breast, cut into strips
- 1 teaspoon red pepper flakes
- 1 teaspoon fajita or taco seasoning
- 1 (12-ounce) bag mixed fajita vegetables
- Season chicken with red pepper flakes and fajita seasoning. Add to a medium nonstick skillet over medium-high heat and cook 8–10 minutes. Once cooked, remove and set aside.
- Cook vegetables in pan and mix in chicken once vegetables are fully cooked, about 4–6 minutes.
