Hearty Beef Stew
Prep time is quick for this stew, and you can add everything to the slow cooker before you leave for work, ensuring you’ll come home to a tender, fresh dinner.
Serves 4
- 4 medium red potatoes, cut into quarters
- ⅓ cup flour
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 1 pound beef stew meat
- 1 (14-ounce) can diced tomatoes, with liquid
- 2 cups water
- 3 cups frozen stir-fry vegetables
- Add potatoes, flour, salt, pepper, beef, tomatoes, and water to slow cooker and mix well.
- Cook on low 7–8 hours, until beef and potatoes are tender.
- Add frozen stir-fry vegetables, cook another 30 minutes, and serve.
