Swedish-Style Meatballs

These homemade meatballs are much healthier than the frozen meatballs you can buy at the store. To serve in traditional Swedish fashion, serve with gravy and lingonberry jam.

Makes 20 meatballs

  1. Heat oil in a large skillet over medium heat and sauté onions and garlic 5 minutes.
  2. Add celery and parsley and cook 3 more minutes or until celery softens, then set aside.
  3. In a large bowl, combine beef, egg, onion mixture, bread crumbs, salt, pepper, and allspice, mixing well. Form into roughly twenty balls, using about 2 tablespoons of meat mixture for each.
  4. Add beef stock to the pan that the celery cooked in and bring to a boil. Add meatballs, cover, and cook 20 minutes, stirring occasionally.
  5. Serve warm.
