Traditional Shrimp Scampi

Shrimp scampi is a delicious meal that is made using simple ingredients. This recipe uses orzo, but you can substitute your favorite pasta, if desired, or serve plain over steamed vegetables to reduce the carbohydrate count in this recipe.

Serves 4

  1. Cook orzo according to package directions. Stir in salt and parsley and set aside.
  2. In a medium skillet, heat 2 tablespoons butter over medium-high heat. Sauté shrimp 2–3 minutes or until nearly cooked through and then set aside.
  3. Combine remaining 2 tablespoons butter and garlic in pan and cook 30 seconds before returning shrimp to the pan.
  4. Mix shrimp and garlic butter well and serve with orzo.
