Orzo and Shrimp Salad
This unique spin on a pasta salad uses orzo, shrimp, and Mediterranean flavors.
Serves 4
- 8 ounces dry orzo
- 1 pound cooked shrimp, tails removed
- 1 cup cherry tomatoes, sliced in half
- 2 ounces reduced-fat feta cheese
- ¼ cup chopped basil
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- Cook pasta according to package directions. Drain and rinse under cool water.
- Combine orzo with shrimp, tomatoes, feta cheese, basil, oil, and lemon juice in a large bowl.
- Season with salt and pepper, mix well, and serve.
