Garlic Cheddar Cauliflower Soup

This is a cheesy, delicious, and healthy soup that’s sure to please everyone, even those who don’t like cauliflower, as the seasonings provide a nice flavor.

Serves 2

  1. Heat oil in a large saucepan over medium heat and add onion and garlic.
  2. After 5 minutes, add cauliflower and chicken stock, bringing to a boil.
  3. Reduce heat and simmer 20 minutes or until cauliflower is soft.
  4. Transfer mixture to a blender and blend in batches until smooth.
  5. Return to pan, stir in Parmesan, and heat through before serving.
