Garlic Cheddar Cauliflower Soup
This is a cheesy, delicious, and healthy soup that’s sure to please everyone, even those who don’t like cauliflower, as the seasonings provide a nice flavor.
Serves 2
- 2 tablespoons olive oil
- 1 small yellow onion, peeled and chopped
- 2 cloves garlic, minced
- 1 medium cauliflower head, rinsed and chopped
- 4 cups low-sodium chicken broth
- ½ cup grated Parmesan cheese
- Heat oil in a large saucepan over medium heat and add onion and garlic.
- After 5 minutes, add cauliflower and chicken stock, bringing to a boil.
- Reduce heat and simmer 20 minutes or until cauliflower is soft.
- Transfer mixture to a blender and blend in batches until smooth.
- Return to pan, stir in Parmesan, and heat through before serving.
