As fancy as these breakfast pastries look, you would think they took some serious time and effort to make. However, the secret is the puff pastry—it makes you look like a pastry pro without all of the effort.
1 (17-ounce) box puff pastry, thawed
½ cup apricot jam
16 slices deli ham
8 slices Swiss cheese, cut in half
1 large egg
1 tablespoon milk
Preheat the oven to 400 degrees. Roll one sheet of the puff pastry out on a lightly floured surface until it is a 10-inch square. Cut the pastry into 4 squares, and then cut each square into halves diagonally. Place the triangles on a greased rimmed baking sheet.
Spread a small amount of the jam evenly on each triangle. Place one piece of ham on each triangle, and then top the ham slice with a half slice of the cheese. Roll each triangle, starting with the long end, to form a croissant. Repeat with the remaining pastry triangles.
Whisk together the egg and milk, and then brush the egg mixture onto the croissants. Bake for 18 to 20 minutes, or until the croissants are puffed and golden brown. Let them cool slightly before serving them warm or at room temperature.
