SOUTHERN BELLE BLUEBERRY-PEACH PARFAITS

These refreshing parfaits are most delicious when they are made with the summer’s best blueberries and peaches. They are just adorable served in mason jars, which also come with lids for easy transporting.

GRANOLA

2 cups old-fashioned oats

1 cup chopped pecans

¼ cup canola oil

¼ cup brown sugar

2 tablespoons honey

1 teaspoon vanilla extract

¾ teaspoon ground cinnamon

½ teaspoon salt

½ cup raisins (optional)

PARFAITS

1 cup blueberries

1 cup peeled and chopped peaches

1 tablespoon honey

2 cups vanilla yogurt, divided

For the granola, preheat the oven to 300 degrees. Place the oats and pecans on a rimmed baking sheet. In a small saucepan stir together the oil, brown sugar, honey, vanilla, cinnamon, and salt over medium heat. Bring to a boil, and then pour over the oats and pecans. Stir until the oats and pecans are well coated. Bake the granola for 15 minutes, stir it around, and then bake it for another 15 minutes. Allow the granola to cool, and then stir in the raisins, if desired.

For the parfaits, toss together the blueberries and peaches with the honey, and begin assembling the parfaits. Place ¼ cup of yogurt in the bottom of a cup or jar, top with ¼ cup of the fruit, and then ¼ cup of the granola. Repeat the layers once more, ending with the granola. Cover and chill until you are ready to serve them.
