HONEY GLAZED BACON-WRAPPED SHRIMP
If you are looking for a crowd-pleasing appetizer to make on the grill, the search is over! I usually double this recipe because these bacon-wrapped shrimp disappear in a hurry.
10 to 12 slices bacon
1 pound large shrimp
2 tablespoons honey
1 teaspoon Dijon mustard
½ teaspoon chipotle chili powder or regular chili powder
In a large skillet cook the bacon over medium-high heat until it just begins to brown. It should be pliable but not crisp. Remove the bacon, and drain on paper towels. When cool enough to handle, tear or cut each piece into halves. Wrap the bacon pieces around the shrimp, and secure the bacon with toothpicks.
Heat the grill to medium heat. Mix together the honey, mustard, and chipotle chili powder. Grill the bacon-wrapped shrimp for 2 minutes on each side, and then turn off the burners or move the shrimp to indirect heat. Brush the honey glaze on each side of the shrimp, and remove them from the grill. Serve warm.
