Sometimes the simplest appetizers are the tastiest. I recently went to a lunch on the patio of a club house on a golf course where bowls of roasted cashews were placed on the tables for snacking. None of us could keep our hands out of those bowls, so I would say the nuts were the perfect complement to an ice-cold drink.
12 ounces raw cashews
½ teaspoon salt
½ teaspoon chili powder
½ teaspoon paprika
¼ teaspoon white pepper
¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon celery seed
2 tablespoons butter, melted
Preheat the oven to 350 degrees. Place the raw cashews on a rimmed baking sheet, and roast for 5 minutes. Stir and then roast for another 5 minutes. In a medium bowl mix together the salt, chili powder, paprika, white pepper, garlic powder, onion powder, and celery seed.
Add the roasted nuts to the spice mixture, and drizzle the melted butter on top. Toss until the nuts are well coated. Let the nuts cool, and then store them in an airtight container for up to 2 weeks.
MAKES 6 TO 8 SERVINGS.
TIP: These would also make a great gift for the host of a picnic or barbecue.
