SOUTH CAROLINA BOILED PEANUTS

If you have ever taken a road trip through the South, there is no doubt you’ve seen numerous signs for boiled peanuts. When I was a kid, we would pass these signs on our way to the beach, and my dad usually stopped at one of these roadside vendors to pick up some. I have wonderful memories of eating this unique Southern snack by the water on summer vacations.

1 pound shell-on raw peanuts

3 tablespoons salt

2 tablespoons Old Bay seasoning

Rinse the peanuts well, place in a large pot, and cover with water. Let them soak for 30 minutes. Drain and rinse them again, and place the peanuts back into the pot. Cover completely with water, and add the salt and Old Bay. Bring to a boil over high heat, cover, and reduce the heat to low. Simmer for 4 hours, or longer if you prefer a very soft peanut. Be sure to check the water throughout the cooking and add more if needed. Drain and serve warm or at room temperature. Store leftovers in the refrigerator for up to 10 days.
