SMOKED SALMON CUCUMBER BITES

These are not only a simple and tasty appetizer, they also look beautiful on a serving platter. Be sure to assemble them shortly before serving so that the cucumbers stay fresh and crisp.

1 (8-ounce) package cream cheese, softened

2 tablespoons heavy cream

2 tablespoons fresh lemon juice

4 ounces smoked salmon, finely chopped

2 tablespoons chopped fresh dill

2 medium English cucumbers

4 to 5 slices bacon, cooked and crumbled

Combine the cream cheese, heavy cream, and lemon juice in a large bowl. Using an electric or hand mixer on medium speed, beat the mixture until it is light and fluffy. Add the salmon and the fresh dill, and continue beating until the mixture is light pink and well combined.

Cut the cucumbers into ½-inch slices on the bias. Place a spoonful of the salmon mixture on each cucumber slice. Sprinkle the crumbled bacon on top. Refrigerate the cucumber bites until you are ready to serve them.
