During the summertime many of us keep a bowl on our kitchen counter filled with a hodgepodge of homegrown garden produce. This salsa is an easy way to use up some of those veggies while perfectly showcasing their fresh flavors.
2 pounds tomatoes, chopped
1 medium green bell pepper, seeded and chopped
3 green onions, sliced
1 medium jalapeño pepper, seeded and finely chopped
1 clove garlic, finely chopped
¼ cup chopped fresh cilantro
Juice of 1 medium lime
¼ teaspoon salt
Tortilla chips, for serving
Combine the tomatoes, green peppers, green onions, jalapeños, garlic, and cilantro in a medium bowl. Add the lime juice and salt to the mixture, and toss everything together. Cover and refrigerate the salsa until you are ready to serve it with tortilla chips.
