CITRUS SPICED SWEET GRILLED CORN

When the corn is sweet in the summertime, I just can’t get enough of it. I use it in all sorts of recipes, sweet and savory, but my favorite way to showcase corn is on the grill. My husband and I love a good char on our corn, which is what you will get by placing it directly on the grill. Try this method at your next backyard cookout.

¼ cup (½ stick) butter, melted

2 ½ teaspoons Cajun seasoning

2 teaspoons finely grated orange peel

2 tablespoons fresh orange juice

1 tablespoon fresh lime juice

6 ears of corn, shucked

Heat the grill to medium-high heat. In a small bowl mix together the melted butter, Cajun seasoning, orange peel, orange juice, and lime juice. Brush about half of the mixture onto the shucked corn.

Place the corn directly over the heat, and grill it for 8 to 10 minutes, turning it every 2 minutes. Remove the corn from the grill, and brush with the remaining butter mixture. Serve immediately.
