HONEY MINTED MELON MEDLEY

There is nothing more refreshing on a hot summer day than cool, fresh melon. A quartered watermelon and a fork is a perfectly acceptable dessert in the South on a steamy July day. This combination of melons, though, gets a few simple additions that result in a salad that’s bursting with flavor.

½ medium watermelon

1 medium honeydew

1 medium cantaloupe

2 teaspoons finely grated lime peel

2 tablespoons fresh lime juice

2 tablespoons honey

2 tablespoons chopped fresh mint

Using a melon baller or small spoon, scoop out 2 cups of melon balls from the watermelon. Repeat with the honeydew and cantaloupe to make 2 cups of each. Place the melon balls in a large bowl. In a small bowl whisk together the lime peel, lime juice, honey, and mint.

Pour the lime mixture over the melon balls, and gently toss everything together. Refrigerate the salad until you are ready to serve it.
