GARDEN FRESH TOMATO AND PEACH SALAD
This is a fresh and fabulous salad that is perfect for a hot summer day. I can’t think of a better way to showcase the South’s freshest tomatoes and peaches. It is a simple but elegant dish that could not be easier to toss together.
3 tablespoons white balsamic vinegar
1 ½ teaspoons Dijon mustard
2 teaspoons honey
½ teaspoon salt
¼ teaspoon ground black pepper
¼ cup extra-virgin olive oil
¼ cup fresh basil, chopped
3 medium ripe peaches, sliced into wedges
3 medium tomatoes, sliced into wedges
½ cup thinly sliced red onion
In a large bowl whisk together the balsamic vinegar, mustard, honey, salt, and pepper. Slowly drizzle in the olive oil, whisking constantly, and then stir in the basil.
Add the peaches, tomatoes, and onions to the bowl and toss everything together gently. This salad is best served at room temperature.
