“END OF SUMMER” GRILLED GREEN TOMATOES

It almost doesn’t sound right not to have the word fried in front of green tomatoes. However, this sweet and tangy glaze along with a nice char on unripe tomatoes make for an absolutely fantastic end of the season side dish or burger topper.

2 tablespoons balsamic vinegar

1 tablespoon brown sugar

2 tablespoons extra-virgin olive oil

½ teaspoon salt

¼ teaspoon ground black pepper

4 large green tomatoes, cut into ½-inch slices

Heat the grill to medium-high heat. Whisk together the balsamic vinegar, brown sugar, oil, salt, and pepper in a small bowl. Place the tomato slices on the grill, and brush with the vinegar mixture. Grill for 2 to 3 minutes per side, continuing to brush the vinegar mixture on the slices as they cook. Serve immediately.

MAKES 6 TO 8 SERVINGS.
