Chow chow is a fantastic Southern condiment that goes with all things grilled or smoked. It’s sweet and tangy, and we love it on most anything.
1 medium red bell pepper, chopped
1 poblano pepper, chopped
1 ½ cups chopped white onion
2 cups frozen or fresh corn kernels, thawed
½ cup cider vinegar
½ cup sugar
1 ½ teaspoons salt
½ teaspoon dry mustard
½ teaspoon ground cumin
½ teaspoon ground black pepper
Place the red peppers, poblano, and onions in the bowl of a food processor. Pulse until a salsa consistency is formed. Don’t over mix. The ingredients should still be distinguishable from one another. Place the pepper mixture into a large saucepan, and add the corn, vinegar, sugar, salt, mustard, cumin, and pepper. Bring the mixture to a boil over medium-high heat, reduce the heat to low, and cook for another 15 minutes. Place the chow chow in an airtight container, and refrigerate it until you are ready to serve.
