HAM AND WHITE BEAN CORNBREAD SALAD
Ham and white beans are one of my favorite Southern combinations so I used that concept to come up with this tasty cornbread salad. Let’s just say, this salad is totally worth making a batch of cornbread for. This is a recipe everyone will be begging for!
BUTTERMILK DRESSING
½ cup mayonnaise
½ cup sour cream
½ cup buttermilk
2 tablespoons fresh lemon juice
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon dried dill
½ teaspoon ground black pepper
½ teaspoon salt
SALAD
1 (8 ½-ounce) package cornbread mix, prepared and cubed
2 (15-ounce) cans white beans, drained and rinsed
2 cups chopped tomatoes
½ cup sliced green onions, divided
1 ½ cups frozen corn, thawed
1 ½ cups cubed ham
1 medium green bell pepper, chopped
1 ½ cups freshly shredded Cheddar cheese
For the dressing, in a medium bowl whisk together the mayonnaise, sour cream, buttermilk, lemon juice, garlic powder, onion powder, dill, pepper, and salt.
For the salad, fill the bottom of a large glass bowl or trifle dish with the cornbread cubes. Layer on the remaining ingredients, starting with the beans, tomatoes, ¼ cup of the green onions, corn, ham, green peppers, and cheese. Spread the dressing on top of the cheese, and top the salad with the remaining ¼ cup green onions. Cover the dish with plastic wrap, and refrigerate until you are ready to serve it.
