SPARKLING BERRY CONGEALED SALAD

This simple Jell-O salad pairs well with grilled meats and barbecue. The ginger ale really gives it a nice boost.

3 (3-ounce) packages raspberry gelatin

3 cups boiling water

3 cups cold ginger ale

3 cups frozen mixed berries

2 teaspoons finely grated orange peel

¾ cup chopped pecans

Place the gelatin in a large bowl, and add the boiling water. Stir until the gelatin is completely dissolved. Stir in the ginger ale. Refrigerate the gelatin for 30 minutes, until it is slightly firm but still runny.

Stir the berries, orange peel, and pecans into the gelatin mixture. Pour it into a mold, if desired. Refrigerate the salad for at least 4 hours before serving.

MAKES 10 TO 12 SERVINGS.

TIP: If you are traveling with this dish, be sure to keep it covered and very chilled.
