STRAWBERRY POPPY SEED SPINACH SALAD

This salad is light and fresh with a pretty pop of color from the strawberries. The addition of the arugula adds a touch of spice to this sweet salad.

POPPY SEED DRESSING

½ cup mayonnaise

2 tablespoons fresh lemon juice

1 tablespoon honey

1 ½ teaspoons poppy seeds

¼ teaspoon salt

SALAD

5 ounces baby spinach

1 cup arugula, packed

2 cups sliced strawberries

6 slices bacon, cooked and crumbled

½ cup chopped walnuts

For the dressing, in a small bowl whisk together the mayonnaise, lemon juice, honey, poppy seeds, and salt.

For the salad, toss together the spinach and arugula in a large serving bowl. Top the greens with the strawberries, bacon, and walnuts. Drizzle some of the dressing on top of the salad, and toss until the greens are coated. Serve the remaining dressing on the side.
