LOWCOUNTRY SHRIMP AND SAUSAGE SKEWERS
If you love the flavors of a Lowcountry boil, these grilled skewers will be right up your alley. Spicy sausage and zesty shrimp get fantastic flavor from a lemony Old Bay marinade, brightened up with fresh basil.
1 pound large shrimp, shells removed and tails intact
1 pound Kielbasa sausage, cut into 1-inch pieces
2 tablespoons fresh lemon juice
2 tablespoons canola oil
2 cloves garlic, finely chopped
2 teaspoons Old Bay seasoning
1 tablespoon chopped fresh basil
Thread the shrimp and sausage pieces alternately onto skewers, and place them in a shallow baking dish. In a small bowl mix together the lemon juice, oil, garlic, Old Bay seasoning, and basil. Pour the dressing over the skewers, and marinate for 30 minutes.
Heat the grill to medium-high heat. Place the skewers on the grill, and cook for about 3 minutes on each side, until the shrimp are pink and grill marks have formed. Serve the skewers hot off the grill.
MAKES 4 TO 6 SERVINGS.
TIP: If using wooden skewers, soak them in water for 30 minutes prior to assembling.
