GRILLED BARBECUE CHICKEN PIZZA

If I let him, I believe my husband would have pizza every night of his life. It’s his absolute favorite food. So when I make this barbecue chicken pizza for him, he is in hog heaven. If you have never tried grilling pizza, it’s really a treat and so simple. Once you try it, I guarantee you’ll be hooked.

1 tablespoon butter

¾ cup chopped red onion

1 pound pizza dough (prepared from a package or purchased at a deli)

Canola oil for the grill

⅓ cup prepared barbecue sauce

1 cup chopped, cooked chicken breast

3 slices bacon, cooked and crumbled

¼ cup crumbled blue cheese

½ cup freshly shredded Cheddar cheese

2 tablespoons chopped cilantro

Melt the butter in a skillet over low heat. Add the onions, and cook them, stirring occasionally, until golden, for about 20 minutes.

Heat the grill to medium-high heat. Roll out the pizza dough to about 12 inches in diameter. Dip a paper towel in the oil, and use tongs to rub the towel over the grill grates. Place the rolled-out dough on the grill, and cook for 2 minutes, or until it is charred on one side. Transfer the dough from the grill to a baking sheet, grilled side up.

Spread the grilled side of the dough evenly with the barbecue sauce. Evenly distribute the onions, chicken, bacon, blue cheese, and Cheddar cheese over the top. Place the pizza back on the grill, and close the lid. Cook for 2 to 3 minutes, until the cheese is melted and the bottom side is charred. Remove the pizza from the grill. Sprinkle the top with the cilantro. Slice and serve warm.
