SMOKED GOUDA ROAST BEEF SANDWICHES

These tasty roast beef sandwiches are perfect for making ahead and heating up on the grill or serving chilled at a picnic. The sundried tomato pesto adds a tangy flavor to the rich roast beef.

½ cup sundried tomatoes in oil, drained and chopped

1 clove garlic, roughly chopped

¼ cup fresh basil leaves

¼ cup freshly grated Parmesan cheese

⅓ cup extra-virgin olive oil

12 ounces thinly sliced roast beef

4 hamburger buns

4 slices smoked Gouda cheese

Place the sundried tomatoes, garlic, basil, and Parmesan in the bowl of a food processor, and pulse until ingredients are finely ground. Slowly drizzle in the oil through the chute with the motor running.

Layer the roast beef evenly on the bottom buns, top with the Gouda, and spread the inside of the top of the buns with the sundried tomato mixture. Top the sandwiches, and then wrap each individually in aluminum foil. The sandwiches may be eaten cold or heated on a grill over indirect heat for about 10 minutes for a roast beef melt.
