JERK CHICKEN WRAPS WITH NECTARINE SALSA

For your next picnic, hold the ham and cheese sandwiches, and give these tasty jerk chicken wraps a try. The fresh nectarine salsa is the perfect match for the slightly spicy chicken, all wrapped up for easy eating. This is the ideal picnic treat.

NECTARINE SALSA

1 cup chopped nectarines

1 cup chopped tomatoes

1 tablespoon finely chopped jalapeño pepper

2 tablespoons chopped fresh cilantro

1 tablespoon fresh lime juice

⅛ teaspoon salt

CHICKEN WRAPS

1 teaspoon salt

1 teaspoon ground cumin

½ teaspoon ancho chili powder

½ teaspoon ground black pepper

¼ teaspoon allspice

1 ¼ pounds boneless, skinless chicken breast halves

¼ cup light mayonnaise

4 sandwich wraps

For the salsa, in a medium bowl combine the nectarines, tomatoes, jalapeños, cilantro, lime juice, and salt, and gently toss the ingredients together. Refrigerate the salsa until you are ready to assemble the wraps.

Heat the grill to medium-high heat. In a small bowl mix together the salt, cumin, chili powder, pepper, and allspice. Sprinkle the chicken evenly with the spice mixture. Place the chicken on the grill, and cook for 5 to 6 minutes per side, depending on the thickness of the chicken. Remove the chicken from the grill, and slice it against the grain into ½-inch strips.

Spread 1 tablespoon of mayonnaise onto the center of each wrap. Place the sliced chicken on the mayonnaise, and then top the chicken with the salsa. Fold two sides of the wraps in, and then roll them up tightly like a burrito. Slice the wraps into halves diagonally, and refrigerate them until you are ready to serve them.

MAKES 4 SERVINGS.

TIP: Once you have assembled the wraps, wrap them tightly in plastic wrap, and then store them in a cooler for easy transporting.
