OATMEAL RAISIN GRANOLA BARS

For a summer day at the park or pool, it’s nice to have a tasty treat for the kids to snack on that will tide them over until supper. These tasty granola bars will do just that.

Cooking spray

2 cups old-fashioned oats

½ cup finely chopped walnuts

¼ cup corn syrup

¼ cup maple syrup

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

¼ teaspoon salt

½ cup mini marshmallows

½ cup raisins

Preheat the oven to 300 degrees. Coat a 9-inch square baking dish with cooking spray. Place the oats and walnuts on a large baking sheet, and toast in the oven for 12 minutes. Transfer them to a large bowl.

Add the corn syrup, maple syrup, vanilla, cinnamon, and salt to the oats and nuts. Stir everything together until the nuts and oats are well coated. Stir in the marshmallows and raisins, and pour the mixture into the baking dish. Press the mixture into the dish to form an even layer, and then bake it for 20 minutes. Let the granola bars cool for at least 2 hours on the sheet before cutting them. Store the bars in an airtight container.

MAKES 9 SERVINGS.

TIP: When pressing the granola before baking, wet your fingers to keep the granola from sticking to your hands.
