Peppers are one of my favorite ingredients to work with because of their health benefits and flavor profiles. With their low calories and ability to increase metabolic activity, in turn, resulting in burned calories and fat, peppers are part of my daily routine. There are many varieties and inspiring ways to use them. My favorite types are habaƱeros, serranos, and jalapeƱos. Each variety has a different strength and different attributes that can be highlighted with other fruits and vegetables. This chapter will demonstrate how to work with the natural heat and highlight the flavor, resulting in food packed full of beta-carotene, antioxidants, and the lively capsaicin.
