For a more subtle donut than I usually crave, I created these treats for a friend who doesn’t care for overwhelming flavors in her baked goods. That being said, this is still a wonderful goodie, especially when it is topped with an orange-extract-inspired icing.
These donuts sport a subtle orange touch, something I’m always game for. They can be glazed with a topping flavored with orange extract, dusted with powdered sugar, or eaten while they’re still warm.
Ingredients
2 tablespoons canola oil
1 cup granulated sugar
1 cup milk (2% or whole)
1⁄2 stick butter (1⁄4 cup), melted
3 egg yolks, beaten
1 teaspoon cinnamon
1 tablespoon orange extract
Zest of one orange, fine
3–4 cups flour
1 tablespoon baking powder
Directions
In large bowl, mix oil, sugar, milk, melted butter, egg yolks, cinnamon, orange extract, and orange zest until combined well.
In a different bowl, sift the flour and baking powder together, then add this dry to the liquid, stirring well, creating a stiff dough.
Chill the dough for 1 hour, then turn out onto a floured surface.
After 45 minutes, preheat canola oil to 375°F.
Knead into a ball, then roll dough out to 1⁄4-inch thickness.
Cut the dough to the desired shape.
Fry pieces for 2 minutes on each side, or until they’re done.
Turn out onto paper towels to drain, then enjoy plain or with the topping of your choice.
Makes 1 dozen donuts
